Oyster-farmer from father to son, Damien is passionate about his work. His oysters, bred between Noirmoutier and Beauvoir-sur-Mer, are renowned for their iodised flavour.
They feed on plankton from the bay. The oysters are enriched with nutrients from the sea over a period of months until they produce a quality product. This is where they acquire all their flavour characteristics.
Come and meet him at his "cabane" and take a tour of his establishment, where he'll tell you all about his love for his trade. You'll also be able to taste his oysters and shellfish.
